Tony Lo Terzo is a veteran of hospitality in Australia. Since arriving in Melbourne from Sicily at the age of 11, he has done everything from working in an Italian deli (from age 11!), run his own catering companies, trained as a chef, and specialised in exceptional front of house service for esteemed restaurants including Eliza’s at Double Bay, Grossi Florentini in Melbourne, and most recently at Italian and Sons in Canberra. Tony recently visited Italy again after many decades, and was struck by the level of service in every bar, café and restaurant. He was inspired to once again open his own place and bring this level of service to Canberra.
Francesco Petrillo grew up near Naples and went to live-in hospitality school at the age of 14, where he spent the next three years learning all aspects of hospitality before another two years specialising as a chef. He worked in Italy and Germany before moving to Canberra 8 years ago. He was the head chef at Mezzalire for 4 years and Italian and Sons for 3 years. Francesco is committed to bringing authentic Italian food to Canberra, and his particular expertise is pasta, in every shape and size.
